Peach Oatmeal Breakfast Muffins

This recipe initially came from the Thriving Home blog and is called the “Blueberry Power Muffin.”  I absolutely love this blog, and their cookbook, From Freezer to Table,  is the marriage of my top two cooking philosophies – healthy and easy.  This recipe originally belongs to them with minor ingredient and instruction changes on my end.

If you have clicked on the printable recipe you may have noticed the ground flax.  I sneak ground flax into almost all of my baked goods.  There are so many health benefits to flax including fiber (digestive health), Omega-3 Fatty Acids (cardiovascular health & skin/hair/nails) and lignans (phytonutrients).

I do make this muffin with the blueberries as well, but regardless of the fruit I always heavily blend the fruit into the wet ingredients from the beginning.  I find my kids are less inclined to be bothered by “bits” when the fruit is smoothly incorporated into the batter.  It also helps to eliminate the “hot pockets” that blueberries and peaches can create when heated up.

When I make baked goods, especially muffins and cakes, I use a process called flash freezing.  All this means is that as soon as it comes out of the oven I put them in the freezer.  I usually let these muffins sit for a couple minutes, but you can see the steam inside the bag.  You may have little icicles on the muffins when you first take them out to reheat, but this process helps retain moisture.  Between the Greek yogurt and flash freezing these are delicious and moist when reheated for weeks to come!
