Banana Bread Recipe – Simple
This banana bread recipe – simple and easy – is extra delicious and nutritious thanks to the special ingredient of Greek vanilla yogurt.

I love a good banana bread recipe, but it has to be just right.
Simple and delicious.
What makes this one so good is my go-to not so secret ingredient of Greek yogurt.
As usual, it adds the perfect amount of moisture and flavor creating a melt in your mouth bite.
One of the tricks I have learned over the years is to bake my bread in glass pans instead of metal.
This allows for more even baking so you don’t have a really dark edge with an overly gooey center.
Make one loaf for now, and freeze the other loaf for later!

Banana Bread
Ingredients
- 4 bananas, mashed
- 1 1/2 c nonfat Greek vanilla yogurt
- 1 1/2 tbsp lemon juice
- 2 eggs
- 2 tsp vanilla
- 6 tbsp butter, softened
- 2 c white flour
- 1 c quick oats
- 1 c sugar
- 2 tsp cinnamon
- 2 tsp baking soda
- 1 tsp salt
Instructions
- Mash the bananas in a mixer or by hand.
- Mix the rest of the ingredients together.
- Pour the mixture into 2 greased bread pans.
- Bake at 350F for 55 mins.
Freezing Instructions
- After cooled, wrap in tin foil and freeze.
