Cauliflower Tater Tot Casserole Recipe

We are always looking for yummy recipes that aren’t laden with carbs, and when a coworker introduced me to the basic concept of replacing potatoes with cauliflower I got excited about making this recipe my own.
With a couple of spices added here and there, this recipe was a family winner!
By the way, the easiest way to approach riced cauliflower is to buy the frozen packages so that all you have to do is stick them in the microwave.
I buy mine in bulk at Costco.

Cauliflower Tater Tot Casserole
This cauliflower tater tot casserole recipe is a fabulous low-carb, gluten-free dish that the whole family will enjoy!
Ingredients
- 2 lbs ground beef (or turkey)
- 1 onion, diced
- 4 garlic cloves, minced
- 2 cans condencsed cream of muschroom soup
- 4 c riced cauliflower
- 4 c cheddar cheese, shredded
- 2 tbsp chives
- salt & pepper
Instructions
- Saute the onions in a large skillet. Add the garlic and the beef and brown.
- Add salt and pepper to the beef and stir in the cream of mushroom.
- Place in the bottom of a greased 9×13 pan.
- Cook the riced cauliflower.
- Mix the cauliflower with 2 cups of shredded cheddar and 2 tbsp chives.
- Spread on top of the beef. Top with the remaining cheddar cheese
- Bake at 350F for 40 minutes or until cheese is browned.
Freezing Instructions
- Add all ingredients to a freezer-safe 9×13. Seal with plastic wrap and tin foil and place in the freezer. Thaw overnight. Bake as directed above.
