Cheesy Cauliflower Tuna Casserole Recipe
Years ago I got my mom’s delicious tuna salad recipe and since then have incorporated it into so many different recipes.
We are always looking for low carb options and cauliflower has become a go to nutrient dense replacement for empty carbs.
This cheesy cauliflower tuna casserole recipe is loaded with veggies and creamy tuna and topped with yummy sharp cheddar cheese.

Cheesy Cauliflower and Tuna Casserole
Loaded with veggies, creamy tuna , and bubbling cheese, this tuna casserole recipe is a low carb dish the whole family will enjoy!
Ingredients
- 1/4 c butter
- 1 onion, diced
- 2 lg carrots, diced
- 4 c 1% milk
- 1 tsp salt
- 2 tsp honey mustard
- 1/4 c ground flax
- 16 oz 4 c sharp cheddar cheese, shredded
- 2 lbs frozen cauliflower
- 2 tbsp apple cider vinegar
- 2 tbsp sugar
- 24 oz tuna
- 1/3 c plain nonfat Greek yogurt
- 1/3 c mayo
Instructions
- Melt the butter in a sauce pan. Add the diced carrots and onion and saute for a couple minutes.
- Add the milk, salt, and honey mustard. Heat until milk comes to a low boil.
- Remove from the heat and stir in the ground flax, and 2 c cheddar cheese.
- In a separate bowl, mix the tuna,vinegar, sugar, mayo and Greek yogurt. Spread on top of the cauliflower layer.
- Pour the sauce over the cauliflower and tuna.
- Top with the remaining cheese.
- Bake at 350F for 35 minutes or until cheese is bubbly and brown.
