I love sneaking nutrient-dense ingredients into my I love sneaking nutrient-dense ingredients into my recipes so that they pack a punch without sacrificing flavor.  A few of my favorite additions include Greek yogurt (adds a punch of protein) and ground flax (all kinds of fabulous omega 3s) in my baked goods.

Muffins are one of my favorite nutrient-dense snacks because they can be made in bulk and then frozen for later to enjoy for a quick morning breakfast, an after-school snack, or a last-minute get-together.

This past week I actually took time to press pause This past week I actually took time to press pause on work that could wait and read a book [for pleasure!] after lunch. You procrastinators out there are confused.  My fellow "pre-crastinators" just raised their glasses. 

Last weekend Gracie was part of a promotional photo shoot for @cavod_arts where she does dance, musical theater, and acting, and then right after the shoot, she had rehearsal for her upcoming show, Lion King Jr (local parents this is a GREAT show for your kids). 

People ask me how she balances it all and if she ever gets overwhelmed and anxious which is a great question and one that I ask Gracelyn frequently to make sure I am checking in with her regularly.  For one, it helps that I get her, so I am able to recognize and help prevent that sense of overwhelm because I've been there. 

But moreover, she LOVES what she does.  She asks to go to rehearsal hours before she has been called to watch other scenes being blocked or choreographed.  She is busy, yes, but she is busy doing something she loves.  I think that makes a big difference.  Too often we busy ourselves for the sake of being busy without even enjoying the time spent. Ergo, forcing myself to pause work that can wait and read a book for pleasure.

We love lemon recipes in our house. The one lemon We love lemon recipes in our house.  The one lemon-flavored recipe, however, I had yet to create was a yummy lemon cake.  There are a lot of lemon cake recipes out there, but they often include a processed boxed mix, jello, or artificially flavored pudding, and the fact is they just do not taste as good.  I want my cakes homemade.

So after trial and error, there are no box mixes here.  This scratch lemon cake recipe is light,  fresh, and topped with a fabulous lemon whipped cream (also made from scratch).
