Crispy Roasted Garlic Potatoes With Rosemary
These crispy roasted garlic potatoes with rosemary are a delicious side dish recipe that are perfect for any meal and have been a staple of our annual Christmas fondue party every year for the past 6 years.
There are 4 tricks to getting a perfectly crispy bite of roasted potato.
First of all, cut the potatoes into small pieces.
Second, shake the potatoes with rosemary, garlic, salt, and olive oil in a large ziplock bag.
This evenly coats all of the pieces and allows for even roasting in the oven.
The third secret is placing the potatoes directly onto the sheet pan without using tin foil as they do not brown as well on the tin foil for whatever reason.
Lastly, the potatoes should be in a single layer. Use an extra-large sheet pan to make this possible.

Crispy Roasted Garlic Potatoes With Rosemary
Ingredients
- 3 lbs red potatoes
- ? c olive oil
- 4 cloves garlic minced
- 1 tsp salt
- 1 tbsp rosemary
Instructions
- Cut the potatoes into small chunks.
- Combine all of the ingredients in a large ziplock gallon bag and mix thoroughly coating all of the potato pieces.
- Place in a single layer on a large baking sheet and Do NOT use tin foil underneath.
- Bake at 475F for 35 mins turning occasionally.
Freezing Instructions
- Prepare the potatoes as instructed above and be sure to use a Freezer Gallon Bag.. Thaw overnight in the fridge. Bake as directed above.
