I love egg rolls.
But lets be honest my favorite part is the crispy fried dough. What if we could replicate all the delicious flavor without the carbs?
Enter – the concept of an egg roll in a bowl. This is not a new concept, but I put together a recipe that upped the protein count without sacrificing flavor. It has already become one of our favorites!

Egg Roll in a Bowl Recipe
Ingredients
- 1 onion, diced
- 2 lg carrots, grated
- 1 lb ground turkey or pork
- 4 garlic cloves, minced
- 1/2 tsp ginger
- 14 oz coleslaw
- 1/4 c soy sauce
- 2 eggs
Instructions
- In a large saucepan saute the onion and carrots for 5 minutes or until soft
- Add the turkey, garlic and ginger and heat on medium for about 10 minutes or until meat is cooked through.
- Mix in the coleslaw and the soy sauce and heat until softened.
- Make a well in the center and cook the 2 eggs.
- Mix everything together.
I made this for my family tonight, and it was a HUGE hit! 6 kids, all under 10…all raved about it! So delicious!
