I love egg rolls, but let’s be honest, my favorite part is the crispy fried dough. What if we could replicate all the delicious flavor without the carbs?
Enter the egg roll in a bowl. This is not a new concept, but I put together a recipe that upped the protein count without sacrificing flavor. It is one of my favorite low carb recipes, and it is also super quick and easy which makes it a win win all around.
You can use ground beef, ground chicken or ground turkey for this recipe. Our preference is to use ground turkey.
There are veggies diced into this dish which makes it an easy one dish dinner, but you could also add some steamed broccoli on the side.

Egg Roll in a Bowl Recipe
Ingredients
- 1 onion, diced
- 2 lg carrots, grated
- 1 lb ground turkey or pork
- 4 garlic cloves, minced
- 1/2 tsp ginger
- 14 oz coleslaw
- 1/4 c soy sauce
- 2 eggs
Instructions
- In a large saucepan saute the onion and carrots for 5 minutes or until soft
- Add the turkey, garlic and ginger and heat on medium for about 10 minutes or until meat is cooked through.
- Mix in the coleslaw and the soy sauce and heat until softened.
- Make a well in the center and cook the 2 eggs.
- Mix everything together.
I made this for my family tonight, and it was a HUGE hit! 6 kids, all under 10…all raved about it! So delicious!
