Happy meal plan Monday! We took full advantage of the sunny weather here in Lancaster, PA, and spent lots of time outside.
I got a couple runs in, and I am painfully reminded every year how being in shape is not the same as being in running shape (and vice versa).
My dad got home from the hospital on Friday and has begun the slow process of open-heart surgery recovery and cardiac rehab. Thank you again for the kindness you have shown to our family.
Life does go on and as one must eat we have another round of Meal Planning Monday, and this week on the menu we have
- Sheet Pan Fajita Salmon and Green Beans
- Skillet Sausage and Peppers
- Slow Cooker Sweet & Sour Meatballs and Roasted Brussels
- Slow Cooker Omelette & Hash browns
- Beef Zucchini Spaghetti
A note on the slow cooker omelette – be wary of leaving it cook for too long as it will get burnt on the bottom. Try cooking it for 8 hrs and decrease if necessary. Every slow cooker is different, but you may have to find just the right length of time for your cooker.
