Everyone needs an easy dessert recipe in their arsenal that can be whipped up quickly and is a guaranteed crowd-pleaser every time.
If you need one, then you have come to the right place because this ice cream cake has been on repeat this summer – Lily’s birthday, vacation, July 4th – and it is super easy.

The base of this recipe was first introduced to me by two of my ER coworkers (thanks Colleen and Anne!).
I love this recipe because it can be customized in so many ways and for any occasion.
For Lily’s birthday party, I made it with crushed Oreos and garnished it with freshly cut strawberries.
There are never leftovers when I make this recipe.
My kids now frequently request this cake to be made for their birthdays or a special celebration.
In fact, the other day I made a chocolate eclair cake and Gracie said,” Mommy this is ok, but I would much rather have your ice cream cake.”

Oreo Ice Cream Cake
Ingredients
- 24 ice cream sandwiches
- 2 8 oz tubs lite whipped topping
- 30 Oreos, crushed (2 sleeves)
- 2 tsp mint flavoring optional
Instructions
- Crush all of the Oreos in a bowl.
- Mix half of them into one tub of whipped topping with 1 tsp mint flavoring.
- In a 9×13 dish layer approximately 11-12 ice cream sandwiches on the bottom.
- Spread the Oreo mixture on top.
- Place a second layer of 10-11 ice cream sandwiches.
- Mix another 1 tsp of mint into the second tub of whipped topping and spread onto the second layer of ice cream sandwiches.
- Top with the rest of the crushed Oreos
- Place in the freezer approx 45 mins-1hr.
Looks delicious. Easy, fast, kids will love it. So will ice cream-crazed husband. Not so sure you should be using the trademarked “Oreo” when you are CLEARLY not using Nabisco Oreos.
I love this recipe. I have made it before using butterfinger candy bars instead of oreos. I like to mix my crushed butterfingers with the whipped topping and spread it on top of the ice cream sandwiches and then add more crushed butterfingers for garnish. Yum!!!
