Chocolate Chip Pumpkin Bars
Ingredients
- 3/4 cup butter, softened
- 1 cup brown sugar
- 1 cup flour
- 2 cup rolled oats
- 1/2 tsp baking soda
- 1 tsp salt
- 15 oz can pumpkin puree
- 14 oz can sweetened condensed milk
- 2 eggs
- 1 tbsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 1 cup semi-sweet chocolate chips
Instructions
- Mix the butter, brown sugar, flour,oats, baking soda and salt and press two thirds of the mixture into the bottom of a greased 9×13 baking dish.
- Set the remaining oat mixture aside.
- Mix the milk, cinnamon, ginger, pumpkin, and eggs in a bowl. Pour over the bottom oat layer..
- Top with the remaining oat layer and chocolate chips.
- Bake at 350F for 45 minutes.
Freezing Instructions
- Prepare as directed above and allow to cool for 2 hours. Either Wrap tightly and Freeze in the pan or Cut into bars. Wrap individually with plastic wrap and then with aluminum foil. Reheat in microwave prior to serving.
