Sugar Cookie Bars With Whipped Vanilla Icing
This easy sugar cookie bar with whipped icing is a delicious alternative to the traditional sugar cookie for decorating recipe.
Have you ever had the sugar cookie latte at Starbucks ? Every Christmas sugar cookie flavored goodies hit the shelves, whether they be in a drink or dessert form (although if you look at the nutrition label on the latte it might as well be a dessert), and rightly so. Sugar cookies are delicious.
My issue with the traditional sugar cookie recipe to decorate is that unless you are ready to dedicate several hours to the making and decorating of said cookie, they are not a convenient holiday treat despite their deliciousness. So . . . I came up with a super easy to make, and utterly delicious iced sugar cookie bar that can be made several ways.
In this case I added cinnamon to the sugar cookie bar which makes it taste a little like a snickerdoodle and spread my homemade whipped vanilla icing over the bars and topped with fresh peaches.
Another option is to keep the cinnamon out of the sugar cookie bar, top with vanilla icing and sprinkle festive toppings over the icing prior to serving.
Or if you really love cinnamon spread my homemade whipped cinnamon icing over the bars for a delectable treat. Regardless of how you choose to make this recipe, it is a crowd favorite every time and is the perfect treat for a summer picnic or a holiday dinner.

Banana Cake With Whipped Cinnamon Icing
Ingredients
- 1 1/2 c 1% milk
- 1 1/2 tbsp lemon juice
- 4 bananas, mashed
- 1/4 c butter, melted
- 3 eggs
- 2 tsp vanilla
- 3 c white flour
- 2 c sugar
- 1 1/2 tsp baking soda
- 1/2 tsp salt
Whipped Cinnamon Icing
- 8 oz lite cream cheese* *room temperature for creamier icing
- 1 stick butter, softened
- 1/3 c nonfat vanilla (or plain) Greek yogurt
- 1 1/4 c powdered sugar
- 1 tsp vanilla
- 2 tsp cinnamon
Instructions
- Mix the milk and lemon juice and set aside.
- Blend the bananas until creamy and add the rest of the cake ingredients including the milk and lemon juice. Pour into a greased 9×13 glass pan and bake at 315F for 1 hr.
- While the cake is baking, mix the ingredients for the icing and set in the fridge.
- After the cake has cooled, spread the icing on top.
