Pumpkin Chocolate Chip Oat Bars

These pumpkin chocolate chip oat bars are layered with a sweet oat crumble, creamy pumpkin, and topped with chocolate chips.  A delicious blend of fall goodness that everyone will enjoy!

  • 3/4 cup butter, softened
  • 1 cup brown sugar
  • 1 cup flour
  • 2 cup rolled oats
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 14 oz can sweetened condensed milk
  • 1 tbsp cinnamon
  • 1 tsp ginger
  • 15 oz can pumpkin puree
  • 2 eggs
  • 1 cup semi-sweet chocolate chips


  • Mix the butter, brown sugar, flour,oats, baking soda and salt and press two thirds of the mixture into the bottom of a greased 9x13 baking dish.
  • Set the remaining oat mixture aside.
  • Mix the milk, cinnamon, ginger, pumpkin, and eggs in a bowl. Pour over the bottom oat layer..
  • Top with the remaining oat layer and chocolate chips.
  • Bake at 350F for 45 minutes.

Freezing Instructions

  • Prepare as directed above and allow to cool for 2 hours. Either Wrap tightly and Freeze in the pan or Cut into bars. Wrap individually with plastic wrap and then with aluminum foil. Reheat in microwave prior to serving.
