  • 1 frozen pie crust
  • 1 egg
  • 3 egg yolks
  • 1 cup heavy cream
  • 1/2 cup 1% milk
  • 15 oz can pumpkin puree
  • 1/4 cup sugar
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 3/4 tsp ginger
  • 1/2 tsp nutmeg
  • 1/8 tsp cloves
  • 1/2 tsp salt


  • Roll out the frozen crust and lay over a greased 9 inch pie plate and press the crust along the edge of the pie plate with a fork.
  • Mix the pie ingredients and pour over the crust. (Stop pouring when the filling is slightly below the crust as the filling will rise.)
  • Bake at 325F for 1 hr.
  • Allow to cool for 2 hours. Refrigerate. This will help it to set as well. Bring to room temperature prior to serving if desired. Serve with whipped cream or ice cream!

Freezing Instrutions

  • Prepare as directed above and allow to cool for 2 hours. Wrap tightly with plastic wrap andt hen with aluminum foil. Can be made several weeks in advance if deep frozen. Allow to haw overnight prior to serving.
