This egg roll in a bowl recipe provides a delicious high-protein taste of a classic egg roll but without the carbs!

Ingredients
  

  • 1 onion, diced
  • 2 lg carrots, grated
  • 1 lb ground turkey or pork
  • 4 garlic cloves, minced
  • 1/2 tsp ginger
  • 14 oz coleslaw
  • 1/4 c soy sauce
  • 2 eggs

Instructions
 

  • In a large saucepan saute the onion and carrots for 5 minutes or until soft
  • Add the turkey, garlic and ginger and heat on medium for about 10 minutes or until meat is cooked through.
  • Mix in the coleslaw and the soy sauce and heat until softened.
  • Make a well in the center and cook the 2 eggs.
  • Mix everything together.
