This egg roll in a bowl recipe provides a delicious high-protein taste of a classic egg roll but without the carbs!
ground turkey or pork
garlic cloves, minced
In a large saucepan saute the onion and carrots for 5 minutes or until soft
Add the turkey, garlic and ginger and heat on medium for about 10 minutes or until meat is cooked through.
Mix in the coleslaw and the soy sauce and heat until softened.
Make a well in the center and cook the 2 eggs.
Mix everything together.
