As I am typing this, 4 year old Caleb just said (with his mouth full of a zucchini carrot cake muffin) “Mmm, this is the yummiest muffin I ever tasted.” Haha. Perfect timing. If you are new to the kitchen of Hammers N Hugs, then let me explain that I have a love for discovering and creating nutrient dense and delicious muffin recipes and have been making and freezing them for years. They are perfect for a quick breakfast, a healthy snack, or a quick treat for a last minute play date.
One of the keys to adding veggies to any baked good is to stick them in a food processor and make sure there aren’t chunks such as the one above. I have found, with my kids at least, that if they bite into a big chunk of something then the secret is out. Ha. I personally recommend the Hamilton Beach Food Processor

I’m telling you, blend the veggies really well in a food processor, and these WILL be a hit. Add the ground flax and the Greek yogurt, and you have a nutrient dense and delicious treat for now or for later!
